Baked apples
Looking to get rid of that craving for caramel apples? This delicious baked apple option is finger-licking good, and best of all, you can play with the fillings.
6 Welsh apples, green or yellow
50 grs Flour
Fifty grams of butter
50 grs. chopped nuts
50 grs. Mascarpone sugar
1 teaspoon powdered cinnamon
2 tablespoons Butter
Mint leaves for decoration
Preheat the oven to 180°C and mix the flour, butter, cinnamon powder, sugar and nuts in a bowl. Mix with the fingertips until it has a sandy consistency. Cut off the tops of the apples and make a hole. Butter a baking pan and arrange the apples and cover with the preparation above, bake for 40 minutes. Serve and decorate with fresh mint.
Tapioca with coconut milk
Sweet and gentle. Perfect for the vanilla mousse you like so much. Try it sweetened with stevia and enjoy!
1 cup Medium tapioca beads.
2 cups Water.
Half a slice of cinnamon.
1 piece Star aniseed.
One cup coconut milk.
2 cups whole milk.
1/2 cup coconut cream.
Half a Valencian melon, in pearls
1/2 Chinese melon, pearls
Mint Leaves
Rinse the tapioca in cold water and drain. Place it in a pan with the water, add the cinnamon stick and star anise and cook over medium heat, stirring constantly to prevent sticking. Cook for 25 minutes or until soft; drain and rinse with cold water. Mix the milks with the coconut cream in a bowl. Add tapioca and mix. Add melon pearls and decorate with fresh mint leaves.
Avocado ice cream
It sounds very strange, I know; but believe me when I say it’s delicious.
2 avocados, ripe, shelled and frozen
1/4 cup Lemon juice
Half a cup Frozen, diced coconut milk
1/2 cup Sweetened Greek yogurt
1 teaspoon Vanilla extract
A spoonful of honey
Mix the avocado and lemon and freeze for 2 hours. Blend all the ingredients until you get the consistency of ice cream. If texture is needed, use more coconut milk cubes. Place the mixture in a container and freeze for a few hours. Serve, and if you like, decorate with sliced almonds.
